Pickled Garlic

1 ¾ pounds of Montana Stinking Rose Garlic

2 ½ cups white vinegar

1 cup dry white wine

1 tablespoon pickling salt

1 tablespoon sugar

1 tablespoon dried oregano

5-6 cried chile peppers

Separate garlic bulb into cloves and peel.

Combine vinegar, wine, salt, sugar and oregano in a saucepan. Bring to boil. Simmer one minute. Remove from heat. Add garlic cloves. Stir one minute.

Put on pepper in each sterilized half pint jar. Fill jars to within one inch of top with garlic cloves. Add hot liquid leaving ¾ inch headspace.

Process jars in boiling water bath for 15 minutes. Do not us jars larger than ½ pint with the recipe.
