Pesto Pasta Salad

Take scape pesto or Basil pesto and thin with olive oil to desired consistency.

Combine cold cooked rottini or shell pasta with shredded parmesan and/or shredded mozzarella cheese or crumbled feta cheese, add cherry tomatoes, black olives and sliced green, red, or yellow peppers, and sliced onions. Toss and mix.

Pour the pesto dressing over the pasta mixture, toss and serve.
